Who would have thought that good old N2, the colorless, odorless element that makes up most of the air we breathe, could help produce such a luscious new form of ice cream? The founders of Blue Sky Creamery, both scientists, discovered a way to freeze ice cream in under one second by adding liquid nitrogen to the other natural ingredients. This rapid freezing process eliminates the formation of ice crystals for a much smoother end product, with no grainy texture whatsoever.  It also contains less air than regular ice cream, so it’s incredibly dense and wonderfully rich.
